High Protein, Peanut Butter Waffles / By Dr. Juan Salinas, Founder P-nuff Crunch

Get going strong with these easy to make crunchy, peanut protein-filled and delicious waffles (note: You can use the same recipe to make pancakes).

Ingredients:

• 1 cup pancake/waffle flour mix
• 1cup Water (or fat free milk)
• 4 Tbsp. Peanut butter
• 4 Tbsp. Peanut flour (also labeled peanut butter powder)
• Optional: 1 tsp. stevia or sugar

Topping:
• P-nuff Crunch – Baked Peanut Puff Original (crumbled)
• Sugar Free maple syrup
• Non dairy whipped cream
• Banana (sliced)
• Cocoa powder

Instructions:
1) Mix the dry ingredients in a bowl2) Add the stevia/sugar, then slowly add the water (FF milk), mixing until “just mixed”. Add a little more water if too thick.
3) Cook in a waffle maker or hot non-stick pan until some bubbles appear in the center of each pancake. Flip and cook for a few more minutes
4) Add the toppings:
a. Pour hot maple syrup on the waffle and then add the whip cream
b. Crush the P-nuff Crunch puffs with a fork into crumbles and sprinkle them on top
c. Add the banana slices
d. Sprinkle cocoa powder
